Honey & Yogurt Olive Oil Cake

Ingredients:

•1 cup whole plain Greek yogurt

•2/3 cup olive oil

•2/3 cup honey

•1 tablespoon finely chopped fresh thyme leaves

•1 teaspoon grated lemon zest

•3 large eggs

•1 1/2 cups all-purpose flour

•1/2 teaspoon baking powder

•1/2 teaspoon baking soda

•1/4 teaspoon salt


In a bowl, whisk together yogurt, olive oil, honey, lemon zest, and thyme. Add the eggs, one at a time, whisking well after each one. Add the flour, baking powder, baking soda, and salt. Mix together with a spatula, until smooth. Transfer the batter to a greased round 9-inch cake pan. Bake for 40-45 minutes or until golden brown. Transfer to cooling rack and let cool for 10 minutes before removing from pan. Top with powdered sugar and fresh thyme leave. Serve with honey, greek yogurt, and your choice of fruit.


This is cake is so light and perfect for afternoon tea or coffee.
